Crackling corn bread

Measure Ingredient
1½ cup Corn-meal
½ teaspoon Salt
2 tablespoons Flour
2 teaspoons Sugar
1 Egg, well beaten
3 teaspoons Baking powder
1¼ cup Milk
1½ cup Cracklings

Add flour, corn-meal, sugar, salt, baking powder, egg, and milk. Add cracklings. Beat thoroughly. Bake in well-oiled shallow pan in hot oven (450ø F) about 20 minutes, or drop by teaspoonfuls on a hot well-oiled griddle. Fry until golden brown. 6 servings. Virginia Cooper, New Orleans, LA.
