|2 pounds||Gumbo crabs; shelled, rinsed and concasser (chopped)|
|½ pounds||Onions; rough chop|
|½ pounds||Leeks; rough chop|
|½ pounds||Celery; rough chop|
|1 teaspoon||Whole dried thyme|
|½ tablespoon||White peppercorns; whole|
|1||Head garlic; cut in half|
|4 quarts||Very cold water|
1. Place all ingredients in stock pot.
2. Bring to a boil, reduce heat and simmer for 45 minutes.
3. Skim carefully.
4. Remove from heat and strain. Note: Do not allow stock to boil rapidly, it will cloud.
