Crab stock

Ingredients
| Quantity | Ingredient | |

| 2 | pounds | Gumbo crabs; shelled, rinsed and concasser (chopped) |
| ½ | pounds | Onions; rough chop |
| ½ | pounds | Leeks; rough chop |
| ½ | pounds | Celery; rough chop |
| 4 | Bay leaves | |
| 1 | teaspoon | Whole dried thyme |
| ½ | tablespoon | White peppercorns; whole |
| 1 | Head garlic; cut in half | |
| 4 | quarts | Very cold water |
Directions
1. Place all ingredients in stock pot.
2. Bring to a boil, reduce heat and simmer for 45 minutes.
3. Skim carefully.
4. Remove from heat and strain. Note: Do not allow stock to boil rapidly, it will cloud.
