Crab stock

Ingredients

QuantityIngredient
2poundsGumbo crabs; shelled, rinsed and concasser (chopped)
½poundsOnions; rough chop
½poundsLeeks; rough chop
½poundsCelery; rough chop
4Bay leaves
1teaspoonWhole dried thyme
½tablespoonWhite peppercorns; whole
1Head garlic; cut in half
4quartsVery cold water

Directions

1. Place all ingredients in stock pot.

2. Bring to a boil, reduce heat and simmer for 45 minutes.

3. Skim carefully.

4. Remove from heat and strain. Note: Do not allow stock to boil rapidly, it will cloud.
