Cottage cheese pancakes

Yield: 4 Servings

Measure Ingredient
1 cup Cottage cheese
3 Eggs
⅓ cup Flour
¼ teaspoon Salt
2 tablespoons Sugar
2 tablespoons Butter; melted
1 teaspoon Baking powder

Place all ingredients in a bowl and mix ONLY until combined. Cook on a lightly greased griddle, turning only once. Serve warm with melted butter and maple syrup or with sour cream and strawberries. Yield: 12 pancakes.
