Cottage cheese pancakes (latkes)

1cupCottage Cheese
2eachesEggs; separated
eachTb Cornstarch
½teaspoonSugar
¼teaspoonSalt

Directions

Blend the cottage cheese, egg yolks, cornstarch, sugar and salt. Beat the egg whites until stiff and fold into the cottage cheese mixture.

Drop by tablespoons on a hot, greased griddle. Lower heat and cook on one side until puffed and dry. Then turn with a spatula and brown lightly on the other side.
