Contadina garden sauce

Ingredients

1tablespoonOlive oil
1cupSliced red onion
2Garlic cloves, minced
1cupGreen and yellow bell pepper strips
2cupsSliced mushrooms
1tablespoonChopped fresh basil OR
2teaspoonsDried basil, crushed
cupContadina Stewed Tomatoes, undrained (14.5 oz can)
cupContadina Tomato Paste (half of a 6 oz can)
½cupChicken broth
½teaspoonSalt (opt)

Directions

In large skillet, heat oil; saute onion and garlic for 1-2 minutes.

Stir in bell peppers, mushrooms, salt and basil; saute for 2 minutes.

Stir in Contadina Stewed Tomatoes and juice, tomato paste and broth; bring to a boil and simmer for 5 minutes. Serve sauce with broiled or grilled chicken over cooked fettuccine.
