Contadina garden sauce

Yield: 8 servings

Measure Ingredient
1 tablespoon Olive oil
1 cup Sliced red onion
2 \N Garlic cloves, minced
1 cup Green and yellow bell pepper strips
2 cups Sliced mushrooms
1 tablespoon Chopped fresh basil OR
2 teaspoons Dried basil, crushed
1¾ cup Contadina Stewed Tomatoes, undrained (14.5 oz can)
⅓ cup Contadina Tomato Paste (half of a 6 oz can)
½ cup Chicken broth
½ teaspoon Salt (opt)

In large skillet, heat oil; saute onion and garlic for 1-2 minutes.

Stir in bell peppers, mushrooms, salt and basil; saute for 2 minutes.

Stir in Contadina Stewed Tomatoes and juice, tomato paste and broth; bring to a boil and simmer for 5 minutes. Serve sauce with broiled or grilled chicken over cooked fettuccine.
