Coconut granola bars

Yield: 12 Servings

Measure Ingredient
2¼ cup Quick-cooking oats; uncooked
1 cup Flaked coconut
¼ cup Wheat germ
¼ cup Plus 2 tb butter or margarin e
¼ cup Brown sugar; firmly packed
½ cup Honey
½ cup Peanut butter
1½ teaspoon Vanilla extract
½ cup Unsalted peanuts; chopped
½ cup Raisins

Recipe by: Southern Living Preparation Time: 0:30 Combine oats, coconut, and wheat germ in a greased 9-inch square pan. Bake at 325 degrees for 25 minutes, stirring occasionally. Set aside. Combine butter, sugar, and honey in a medium saucepan; cook over medium heat, stirring occasionally, until butter melts and sugar dissolves. Remove from heat, and add peanut butter and vanilla, stirring until peanut butter melts. Pour over oat mixture. Add peanuts and raisins, and stir well. (Mixture will seem dry at first; continue stirring until moist.) Press mixture firmly into pan with greased fingertips. Bake at 350 degrees for 12 minutes. Cool on a wire rack. Cut into bars. Yield: 2 dozen.
