Claire's marinated vegetables

Yield: 12 Servings

Measure Ingredient
1 can (#2) Shoepeg Corn; drained
1 can (#2) Leseur Peas; drained
1 can (Small) Tiny Limas; drained
1 can (Small) Green Beans; drained
1 can (Small) Mushrooms; drained
1 small Green Pepper; chopped fine
1 small Red Bell Pepper; chopped fine (Or Substitute Pimento)
1 medium Purple Onion; sliced
2 \N Carrots; diced
2 \N Stalks Celery; diced -Dressing---
¾ cup Sugar
¼ cup Oil
½ cup Tarragon Vinegar

Heat sugar, oil and vinegar until sugar dissolves. Cool to room temperature. Mix with vegetables and chill 24 hours before serving.

Serves 12 as appetizer. Travels well.
