Claire's marinated vegetables

Ingredients

| 1 | can | (#2) Shoepeg Corn; drained |
| 1 | can | (#2) Leseur Peas; drained |
| 1 | can | (Small) Tiny Limas; drained |
| 1 | can | (Small) Green Beans; drained |
| 1 | can | (Small) Mushrooms; drained |
| 1 | small | Green Pepper; chopped fine |
| 1 | small | Red Bell Pepper; chopped fine (Or Substitute Pimento) |
| 1 | medium | Purple Onion; sliced |
| 2 | Carrots; diced | |
| 2 | Stalks Celery; diced -Dressing--- | |
| ¾ | cup | Sugar |
| ¼ | cup | Oil |
| ½ | cup | Tarragon Vinegar |
Directions
Heat sugar, oil and vinegar until sugar dissolves. Cool to room temperature. Mix with vegetables and chill 24 hours before serving.
Serves 12 as appetizer. Travels well.
