Cinnamon fritters

Measure Ingredient
1 cup Hot water
⅓ cup Shortening
2 cups Flour
½ cup Sugar
1 tablespoon Cinnamon
\N \N Salt
2 teaspoons Baking powder
\N \N Oil for deep frying
¼ \N Cinnamon
½ cup Castor sugar

Melt the shortening in the hot water. Stir in the flour, sugar, cinnamon, salt & baking powder. Mix well. Roll into a ball & chill the dough for at least 1 hour. Heat 1" vegetable oil to 375 in a deep fryer or skillet. Break off small lumps of dough & roll into balls. Deep fry for 3-4 minutes until brown. Lift out of hot oil with slotted spoon. Drain on paper towels & cool for a few minutes on rack. Mix cinnamon & sugar together in a bowl. Roll warm cinnamon fritters in the sugar mixture to coat them completely. Serve warm.
