Chocolate cherry cake #1

Yield: 16 Servings

Measure Ingredient
2 cups All-purpose flour
¾ cup Sugar
¾ cup Vegetable oil
2 \N Eggs
2 teaspoons Vanilla extract
1 teaspoon Baking soda
1 teaspoon Ground cinnamon
⅛ teaspoon Salt
1 can (21-oz) cherry pie filling
6 ounces Semisweet chocolate chips
1 cup Chopped nuts
\N \N Confectioners sugar

From: eastman@... (Sherri Eastman) Date: Tue, 29 Mar 1994 13:43:47 -0800 This very different cake is so delicious it doesn't need a frosting! Bake it in a tube or bundt pan. sprinkle with confectioners sugar if desired.

1. Preheat the oven to 350. Butter and flour a bundt pan or 10-inch tube pan.

2. In a bowl, combine the flour, sugar, oil, eggs, vanilla, baking soda, cinnamon and salt. Mix well. Stir in the cherries and their liquid the chocolate chips and nuts.

3. Pour the batter into the prepared pan and bake for about 1 hour, until a cake tester inserted in the center comes out clean.

4. Cool on rack and remove from the pan to cool completely.

5. To serve, sprinkle with confectioners sugar, if desired. Serves 16.
