Chipotle tomato sauce

Ingredients

½cupChopped onions
1tablespoonMinced garlic
½teaspoonWhole oregano leaves
teaspoonGround cinnamon
2tablespoonsOlive oil
cupFresh or canned chopped tomatoes; with juice
cupDry white wine
½teaspoonMinced chipotle chile in adobo
2tablespoonsChopped fresh cilantro

Directions

Saute the onions, garlic, oregano and cinnamon in the olive oil over moderate heat until soft. Add the tomatoes, wine and chipotle and cook uncovered for 15 to 20 minutes until thickened. Stir in the cilantro.

This recipe yields about 3 cups of sauce.
