Ingredients

3largesRed peppers; seeded and chopped
4largesGreen peppers; seeded and chopped
2Hot peppers; seeded and chopped (~RE's Mod. add 6-8 Jalapeno's)
1cupSugar
3cupsCider vinegar
2tablespoonsSalt
4largesOnions
2Cloves garlic
1teaspoonGround cloves
2teaspoonsGinger
teaspoonCinnamon
teaspoonPepper

Directions

Combine all the ingredients except the spices in a large kettle and bring to a boil. Reduce heat and simmer for 2 hours. Add the spices and continue cooking for 15 minutes. Check the seasoning and texture and cook longer if it needs thickening. Pour into hot sterilized jars and seal.
