Chicken salad croissants

2 | cups | Chunked cooked chicken |
¾ | cup | Mayonnaise |
¾ | cup | Chopped walnuts |
½ | cup | Sweetened dried cranberries |
¼ | teaspoon | Salt |
⅛ | teaspoon | Black pepper |
4 | larges | Croissants; split |
4 | Leaves lettuce; optional |
In a large bowl, combine chicken, mayonnaise, walnuts, cranberries, salt and black pepper; mix well. Spread equally over croissants and add a leaf of lettuce to each, if desired. Serve immediately.
