Cherry macadamia nut pancakes

Ingredients

½teaspoonSalt;
6tablespoonsSugar;
½teaspoonBaking soda;
1tablespoonBaking powder;
3Eggs;
3cupsButtermilk;
4tablespoonsButter; melted
1cupSundried cherries; soaked in
1cupWater; 10 minutes & drained
½cupMacadamia nuts;
cupWhipped cream;

Directions

Sift flour, salt, sugar, baking soda and baking powder into a bowl.

Beat eggs, buttermilk and butter in a second bowl. Mix together wet and dry ingredients and stir until sightly lumpy. Dab ¼ cup on heated, oiled griddle. Sprinkle ½ of cherries and nuts over pancakes before turning on the second on the second side. Serve sprinkled with remaining cherries and nuts, topped with 2 oz whipped cream per serving.
