Cheese and sweet pepper sandwiches

Yield: 4 servings

Measure Ingredient
2 tablespoons Olive oil
1 \N Red bell pepper sliced lengthwise into 1/2\" strips
1 \N Yellow bell pepper sliced lengthwise into 1/2\" strips
1 medium Onion(s), thinly sliced
1 teaspoon Dried thyme
\N \N Hot pepper sauce
\N \N Salt and pepper
4 ounces Cheese (softened goat cheese or
\N \N Thinly sliced sharp Cheddar or Monterey Jack)
4 \N Long sandwich buns, sliced open lengthwise

1. Heat the olive oil in a large skillet. Add the bell peppers and cook over moderate heat, stirring occasionally, until wilted, about 6 minutes. Add the onion and cook until all the vegetables are softened, about 15 minutes. Stir in the thyme and season with hot pepper sauce and salt and pepper to taste.

2. Spread or layer the cheese on the bottom half of the buns and heap the vegetables on top. close the sandwiches, then transfer them to plates and serve.
