Measure | Ingredient |

½ \N | Green pepper, coarsely chopped |
⅓ cup | Diced celery |
3 tablespoons | Butter |
3 tablespoons | All-purpose flour |
2 cups | Milk |
2 \N | Carrots, sliced thin |
1 tablespoon | Chopped parsley |
1½ cup | Cooked chicken |
\N \N | Salt and pepper to taste |
1 dash | Of paprika |
1 small | Cauliflower, separated in flowerets and cooked |
½ pounds | Swiss cheese, sliced |
Saute onion, pepper, and celery in butter until tender. Stir in flour and then gradually add milk and cook over low heat until smooth and slightly thickened. Add carrots,parsley, chicken, and seasonings and simmer for 15 minutes. Stir this mixture occasionally. Add cauliflower. Place in a shallow casserole. Top with cheese slices.
Bake in preheated moderate oven (350 F.) until cheese is melted, about 15 minutes.
Makes 6 servings.
