Carrot loaf cake

Measure Ingredient
4 cups Sugar
4 Eggs
1¾ cup Vegetable oil
2 cups Pineapple; crushed
2 teaspoons Vanilla extract
6 cups Flour
4 teaspoons Cinnamon; ground
2 teaspoons Salt
2 teaspoons Baking soda
4 cups Carrot; grated
2 cups Nuts; chopped

Beat together the sugar and eggs. Add vegetable oil, crushed pineapple, drained and vanilla extract. Beat well. Add flour, ground cinnamon, salt and baking soda, all sifted together. Add grated carrots and chopped nuts. Bake in loaf pans @ 325 degrees for 60 minutes or until wooden pick inserted in center comes out clean.
