Carrot hash browns

Ingredients

Quantity Ingredient
2 tablespoons Butter
1 teaspoon Safflower oil
3 mediums Carrots *1 *2
3 mediums Potatoes, all purpose *1 *2
½ small Whit onion *2
½ teaspoon Sea salt

Directions

*1 peeled *2 finely grated

In large skillet melt butter and oil. Add carrots, potatoes and onions. Add seasoning. Saute until browned on one side. Flip over and saute on second side until browned. Break apart into small chunks or serve in wedges cut from the round.
