Carrot cake (2 layer) (10)

Measure Ingredient
1½ cup Cooking oil
2 cups Grated carrots
1 cup Chopped nuts
1 teaspoon Cinnamon
1 teaspoon Soda
1 cup White sugar
1 cup Dark brown sugar
2 cups Self rising flour
4 Eggs
1 pinch Salt
1 pack (8 oz) cream cheese
1 teaspoon Vanilla
Stick melted butter
1 cup Chopped nuts
1 pack Powdered sugar


Cream oil and sugar. Add eggs one at a time. Add carrots, flour, salt, cinnamon and soda. Fold in nuts. Bake at 30-35 min. in 2 X 9 layers.

ICING: Mix until smooth. Spread on cool cake.
