Carribean casserole

Yield: 6 Servings

Measure Ingredient

1 md onion -- chopped

1 TB oil

15 oz can stewed tomatoes

16 oz can black beans

1 ts oregano leaves

1 ts turmeric

½ ts garlic powder

1½ c instant brown rice

Stir onion in hot oil until tender (do not brown). Add tomatoes, beans (include liquid from both), oregano, turmeric, and garlic powder.

Bring to a boil. Stir in rice and cover. Reduce heat to simmer for 5 minutes. Remove from heat and let stand for 5 minutes.
