Candied yams-citrus and spice

Yield: 6 Servings

Measure Ingredient
2 cups Sugar
¾ cup Water
3 tablespoons Butter or margarine
½ teaspoon Grated orange rind
½ teaspoon Grated lemon rind
3 \N Sticks cinnamon
¼ teaspoon Nutmeg
6 mediums Louisiana yams; fresh or canned, cooked, peeled & halved
6 \N Lemon slices
1 small Apple; cored & sliced

Combine sugar, water, butter or margarine, rinds, cinnamon and nutmeg. Heat to boiling point over medium heat; cook 5 minutes. Meanwhile, arrange yams, lemon slices and apple in a 1½-quart casserole. Pour syrup mixture over other ingredients. Bake in moderate oven (350 degrees) for 30 minutes, basting occasionally with syrup.
