2 pounds | Sweet potatoes, peeled and coarsely chopped |
2 cups | Water |
1 cup | Sugar |
1 cup | Packed dark brown sugar |
⅔ \N | Unpeeled orange, sliced and seeded |
⅔ \N | Unpeeled lemon, sliced and seeded |
2 \N | Sticks cinnamon |
1 tablespoon | Vanilla |
½ teaspoon | Ground mace |
Put everything in a pot. Stir. Cover and cook till it comes to a high boil, about ten minutes. Stir, reduce heat, simmer 20 minutes. Uncover, stir, and cook until potatoes are tender, about 20 minutes, stirring occasionally.
