Candied yams 2

Measure Ingredient
4 tablespoons Butter
2 pounds Sweet potatoes, peeled and coarsely chopped
2 cups Water
1 cup Sugar
1 cup Packed dark brown sugar
⅔ \N Unpeeled orange, sliced and seeded
⅔ \N Unpeeled lemon, sliced and seeded
2 \N Sticks cinnamon
1 tablespoon Vanilla
½ teaspoon Ground mace

Put everything in a pot. Stir. Cover and cook till it comes to a high boil, about ten minutes. Stir, reduce heat, simmer 20 minutes. Uncover, stir, and cook until potatoes are tender, about 20 minutes, stirring occasionally.
