Yield: 4 Servings
|3 mediums||Louisiana yams|
|⅓ cup||Brown sugar; firmly packed|
|½ cup||Hot water|
|3 tablespoons||Butter or margarine; melted|
|¼ cup||Coconut; shredded|
Cook yams in skins until nearly tender. Peel and halve. Arrange in greased shallow 1-quart baking pan. Combine sugar, water, salt, and butter; pour over yams. Bake in moderate oven (350 degrees) 15 minutes, basting occasionally. Sprinkle top with coconut; bake 10 minutes longer, or until lightly browned.
