Calamari and vegetable stir fry

Ingredients

1cupCalamari, cleaned
1xRed chilli
3xesClove garlic
½xSpanish onion
1xRed pepper
4xesShallots
½cupOyster mushrooms
1tablespoonSesame oil
1tablespoonSoy sauce

Directions

Cut calamari tubes into large bite size pieces. Place on a board with the inside of the calamari up and cut a criss cross pattern half way through the clamari flesh. Remove seeds for the chilli and slice.

Peel and chop garlic. Cut onion into thin wedges. Cut red pepper into strips. Slice shallots. Cut any large oyster mushrooms in half. Heat oil in a wok. Cook, chilli, garlic, onion, and red pepper until onion is just cooked. Add shallots and calamari and cook until calamari cults into tight scrolls, about 3 min. Add mushrooms & soy sauce, cooking until heated throughly. Serve with noodles or rice.
