Yield: 4 Servings
|2 tablespoons||MAZOLA corn oil|
|1 cup||Uncooked rice|
|1 large||Onion, chopped|
|1 large||Green pepper, chopped|
|1 tablespoon||Minced garlic|
|1 can||(14 1/2 to 16 oz) stewed tomatoes, undrained|
|½ teaspoon||Hot pepper sauce|
1. In medium skillet heat corn oil over medium-high heat. Add rice, onion, pepper and garlic; cook, stirring, 3 minutes. Stir in undrained tomatoes, water and hot pepper sauce, breaking tomatoes with a spoon. Bring to a boil.
2. Reduce heat. Cover and simmer, stirring occasionally, 20 minutes or until liquid is absorbed and rice is tender.
