Cajun red bean relish

Measure Ingredient
3 Shallots
1 tablespoon Minced parsley
2 tablespoons Wine vinegar
5 tablespoons Salad oil
2 cups Red beans, cooked, cold
Salt & pepper to taste

Chop shallots fine, including tops. Add parsley, vinegar, and oil and season to taste. Pour over beans and pack in jars.
