Brochette of chicken

Ingredients

24ouncesChicken breast, cut in 1\" cubes
½bunchFresh parsley, finely chopped
1teaspoonFresh garlic, minced
½teaspoonCumin
Salt and white pepper, to taste
¾cupOlive oil
2dropsYellow food coloring
88\" skewer sticks

Directions

Mix all ingredients well. On each skewer stick, put on 4 ounces of chicken.

Cook over a bed of hot coals on a barbecue pit or broil in oven until tender, about five minutes.
