Broccoli cheddar soup

Yield: 2 servings

Measure Ingredient
¼ cup Chopped onion
¼ cup Butter or margarine
¼ cup All-purpose flour
¼ teaspoon Salt
¼ teaspoon Pepper
¾ cup Chicken broth
1½ cup Milk
1 cup Chopped broccoli, frozen --
\N \N Or fresh cooked
½ cup Shredded cheddar cheese

In a saucepan, saute the onion in butter until tender. Stir in flour, salt and pepper; cook and stir until smooth and bubbly. Add broth and milk all at once; cook and stir until the mixture boils and thickens.

Add broccoli. Simmer stirring constantly until heated through. Remove from the heat and stir in cheese until melted. Yield 2 servings./ Recipe By : Taste Of Home
