Blueberry

Yield: 12 servings

Measure Ingredient
3 cups Unbleached flour
3½ teaspoon Baking powder
¼ teaspoon Baking soda
1 teaspoon Salt
1 cup Blueberries
½ cup Granulated sugar
1 \N Egg white -- whipped
1 cup Skim milk -- at room
\N \N Temperature
⅓ cup Orange juice -- at room
\N \N Temperature
1 tablespoon Orange peel -- grated
½ cup Applesauce

Preheat oven at 350. Prepare pan(s) with cooking spray and flour. In mixing bowl, combine flour, baking powder, baking soda, salt, blueberries, and sugar. In another mixing bowl, combine egg white, milk, juice, orange peel, and applesauce. Mix dry ingredients with wet ingredients just until moistened. Pour into prepared pan(s).

Bake for 1 hour depending on pan size.
