Blender pesto

2cupsFresh basil, torn
½cupOlive oil
2tablespoonsPine nuts, lightly toasted
2Garlic cloves, crushed
1teaspoonSalt
½cupParmesan cheese, freshly grated
2tablespoonsRomano cheese, freshly grated
3tablespoonsButter, softened

Directions

Put basil, olive oil, pine nuts, garlic and salt in blender and mix at high speed. Stop from time to time and scrape sides of blender cup with rubber spatula. Pour mixture into a bowl and beat in cheeses.

Beat in softened butter. Before spooning pesto over pasta, add to it a tablespoon or two of the hot water in which the pasta has boiled.
