Blender pesto

Yield: 8 servings

Measure Ingredient
2 cups Fresh basil, torn
½ cup Olive oil
2 tablespoons Pine nuts, lightly toasted
2 Garlic cloves, crushed
1 teaspoon Salt
½ cup Parmesan cheese, freshly grated
2 tablespoons Romano cheese, freshly grated
3 tablespoons Butter, softened

Put basil, olive oil, pine nuts, garlic and salt in blender and mix at high speed. Stop from time to time and scrape sides of blender cup with rubber spatula. Pour mixture into a bowl and beat in cheeses.

Beat in softened butter. Before spooning pesto over pasta, add to it a tablespoon or two of the hot water in which the pasta has boiled.
