Yield: 8 servings
|2 cups||Fresh basil, torn|
|½ cup||Olive oil|
|2 tablespoons||Pine nuts, lightly toasted|
|2||Garlic cloves, crushed|
|½ cup||Parmesan cheese, freshly grated|
|2 tablespoons||Romano cheese, freshly grated|
|3 tablespoons||Butter, softened|
Put basil, olive oil, pine nuts, garlic and salt in blender and mix at high speed. Stop from time to time and scrape sides of blender cup with rubber spatula. Pour mixture into a bowl and beat in cheeses.
Beat in softened butter. Before spooning pesto over pasta, add to it a tablespoon or two of the hot water in which the pasta has boiled.
