Rocket pesto

Yield: 4 servings

Measure Ingredient
100 grams Rocket; washed (3 1/2oz)
50 grams Pine kernels; toasted (2oz)
2 \N Cloves garlic; peeled
50 grams Parmesan cheese; grated (2oz)
15 grams Pecorino Romano; ( 1/2oz)
6 tablespoons Olive oil

In a food processor combine the rocket, pine kernels, garlic, parmesan cheese, and pecorino until creamy, then gradually add in the olive oil.

Chill until required.


Serving suggestions: A delicious condiment which can be served in a number of ways.Simply spread on tomatoes, grilled vegetables, bread, fish or meat.Alternatively serve stirred into freshly cooked pasta.
