Blender gazpacho

Measure Ingredient
8 larges Red tomatoes, peeled, seeded and chopped
1 \N Clove garlic, minced
2 smalls Onions, chopped
1 \N Green pepper, seeded and chopped
½ cup Scallions, sliced
2 larges Cucumbers, chopped
⅓ cup Olive oil
¼ cup Cider vinegar
1 \N Lemon, juice of
1 tablespoon Aromatic bitters
\N \N Pepper


Puree the tomatoes in blender. Place in a large bowl. Combine the remaining ingredients. Ladle the mixture, about 2 cups at a time, into the blender, and blend until smooth. Combine with the tomato puree. Chill. Serve very, very cold, sprinkled with scallions.
