8 larges | Red tomatoes, peeled, seeded and chopped |

½ cup | Scallions, sliced |
2 larges | Cucumbers, chopped |
⅓ cup | Olive oil |
¼ cup | Cider vinegar |
1 \N | Lemon, juice of |
1 tablespoon | Aromatic bitters |
\N \N | Pepper |
GARNISH
Puree the tomatoes in blender. Place in a large bowl. Combine the remaining ingredients. Ladle the mixture, about 2 cups at a time, into the blender, and blend until smooth. Combine with the tomato puree. Chill. Serve very, very cold, sprinkled with scallions.
