Blender gazpacho

Ingredients

| 8 | larges | Red tomatoes, peeled, seeded and chopped |
| 1 | Clove garlic, minced | |
| 2 | smalls | Onions, chopped |
| 1 | Green pepper, seeded and chopped | |
| ½ | cup | Scallions, sliced |
| 2 | larges | Cucumbers, chopped |
| ⅓ | cup | Olive oil |
| ¼ | cup | Cider vinegar |
| 1 | Lemon, juice of | |
| 1 | tablespoon | Aromatic bitters |
| Pepper | ||
Directions
GARNISH
Puree the tomatoes in blender. Place in a large bowl. Combine the remaining ingredients. Ladle the mixture, about 2 cups at a time, into the blender, and blend until smooth. Combine with the tomato puree. Chill. Serve very, very cold, sprinkled with scallions.
