Blender gazpacho

Ingredients

8largesRed tomatoes, peeled, seeded and chopped
1Clove garlic, minced
2smallsOnions, chopped
1Green pepper, seeded and chopped
½cupScallions, sliced
2largesCucumbers, chopped
cupOlive oil
¼cupCider vinegar
1Lemon, juice of
1tablespoonAromatic bitters
Pepper

Directions

GARNISH

Puree the tomatoes in blender. Place in a large bowl. Combine the remaining ingredients. Ladle the mixture, about 2 cups at a time, into the blender, and blend until smooth. Combine with the tomato puree. Chill. Serve very, very cold, sprinkled with scallions.
