Blackberry soup

Yield: 1 Servings

Measure Ingredient
4 cups Blackberries
4 Apples (pared, cored &
Sliced)
4 cups Apple juice
3 tablespoons Sugar
¼ teaspoon Cinnamon
1 tablespoon Cornstarch
3 tablespoons Water

Pick over berries- discard stems & bruised berries. Place berries & apples in pot. Pour in apple juice. Simmer 20 minutes. Mash. Strain through sieve. Add sugar & cinnamon. Mix cornstarch in water. Add to soup. Bring to boil. Remove & serve hot or chilled. If chilled, top with whipping cream.
