5Feet medium hog casings
4poundsBison (buffalo) meat, with fat, cubed
1poundsBeef fat, cubed
2teaspoonsSalt
2clovesFinely minced garlic
2teaspoonsFinely minced shallots
½teaspoonCayenne
2teaspoonsSweet paprika

Directions

fPrepare casings. Grind the meat and fat together through the coarse disk. Add remaining ingredients and mix well. Grind through the fine disk twice. Stuff into casings, tie off into 3-4" links and cook as for any fresh sausage.
