Bern cheese fritters

| 8 | ounces | Grated Gruyere cheese |
| 2 | Eggs | |
| 2½ | fluid ounce | Milk |
| 1 | teaspoon | Kirsch |
| Fat for frying | ||
| 6 | Slices bread | |
Directions
Mix grated cheese with the egg yolks, milk and Kirsch. Fold in beaten egg whites, and spread mixture on bread. Heat fat in a large frying pan and place bread, cheese side down, in hot fat. When slices become golden brown, turn and fry briefly on the other side.
