Measure | Ingredient |

8 smalls | Beets |
10 ounces | Crab meat, canned or fresh |
2 teaspoons | Minced fresh parsley |
1 teaspoon | Lemon juice |
Steam beets for 20-40 minutes, or until tender. Rinse with cold water, peel and let cool. Meanwhile, mix together crab meat, parsley and lemon juice. When beets are cool, halve and scoop out centers with melon baller, or teaspoon, making a hollow. Stuff with crab mixture. Serve as an appetizer, or for lunch along with stir-fried beets greens.
