Beet soup

Ingredients

| 1 | x | Peeled, halved, sliced |
| 1 | each | Beet greens, |
| 1 | x | Washed and finely chopped |
| 3 | eaches | Stalks celery, diced |
| 1 | tablespoon | Lemon juice |
| 1 | x | Salt & pepper to taste |
| 1 | each | Lg onion, diced |
| 4 | eaches | Carrots, sliced |
| 1 | tablespoon | Vinegar |
| 1 | tablespoon | Horseradish |
| 1 | can | Tomato soup |
Directions
Put vegetables in a large pot with water to cover. Add remaining ingredients and mix thoroughly. Simmer 2 - 2½ hours, until beets and carrots are tender. Source: my Lithuanian mother-in-law
