Beet soup

Ingredients

1xPeeled, halved, sliced
1eachBeet greens,
1xWashed and finely chopped
3eachesStalks celery, diced
1tablespoonLemon juice
1xSalt & pepper to taste
1eachLg onion, diced
4eachesCarrots, sliced
1tablespoonVinegar
1tablespoonHorseradish
1canTomato soup

Directions

Put vegetables in a large pot with water to cover. Add remaining ingredients and mix thoroughly. Simmer 2 - 2½ hours, until beets and carrots are tender. Source: my Lithuanian mother-in-law
