Barley-orzo pilaf

Yield: 4 servings

Measure Ingredient
1 teaspoon Canola or vegetable oil
1 \N Onion(s), finely chopped
1 \N Garlic clove(s), minced
½ cup Orzo
3 cups Chicken stock
1 cup Quick-cooking barley
1 tablespoon Thyme, chopped or
1 teaspoon Dried thyme
2 tablespoons Scallion greens, chopped
\N \N Salt and pepper to taste

In a medium saucepan, heat oil over medium heat. Add onions and saute until softened, about 5 min. Add garlic and orzo and saute until orzo is golden, 3-5 min. Add chicken stock and bring to a boil. Add barley and thyme. Stir once, reduce heat to low, cover, and simmer for 10 min. Turn off heat and let stand for 5 min to absorb any remaining liquid. Stir in scallions. Season with salt and pepper and serve.
