BANANA NUT RING

BANANA GLAZE

Preheat oven to 350. Cream 1 cup sugar and butter or margarine until light and fluffy. Beat in eggs, bananas and vanilla. Fold in sour cream. Sift flour, baking powder, soda and ¼ tsp. cinnamon together. Stir in dry ingredients just until blended. Combine nuts, remaining ¼ cup sugar and ½ tsp. cinnamon. Sprinkle one third of nut mixture into a 9-cup fluted tube pan or a 11 x 7 x 1-½ in.

baking pan. Spoon one-third of batter into pan and spread evenly.

Repeat layering twice. Bake in a 350 oven for 45-60 minutes until a skewer inserted in center comes out clean. Cool upright in pan on wire rack for 10 minutes, then turn out and cool completely. Spoon or spread Banana Glaze over ring. Garnish with pecan halves, if desired.

Makes 12 servings. About 400 calories per serving. Banana Glaze: Combine bananas and sugar in a small saucepan. Cook and stir over medium heat for 5 minutes. Remove from heat. Add lemon juice, brandy and cinnamon. Cool slightly before spooning over ring. Shared By: Pat Stockett
