Baked stuffed yams with sausages

Yield: 6 Servings

Measure Ingredient
6 \N Louisiana yams; baked
¼ cup Sugar
1 \N Lemon; juice and grated rind
1 teaspoon Cinnamon
12 \N Pork sausages; cooked

Scoop yam pulp into mixing bowl and blend with next three ingredients. If desired, substitute juice of small orange or ½ cup pineapple juice. Whip fluffy; refill yam shells. top with little pork sausages and return a few minutes to a hot oven (450 degrees) just before serving.
