Baked stuffed yams with sausages

6 | Louisiana yams; baked | |
¼ | cup | Sugar |
1 | Lemon; juice and grated rind | |
1 | teaspoon | Cinnamon |
12 | Pork sausages; cooked |
Scoop yam pulp into mixing bowl and blend with next three ingredients. If desired, substitute juice of small orange or ½ cup pineapple juice. Whip fluffy; refill yam shells. top with little pork sausages and return a few minutes to a hot oven (450 degrees) just before serving.
