|1½ cup||Cornmeal, Yellow Or White|
|½ teaspoon||(To 1) Salt|
|3 tablespoons||Bacon Grease, Shortening|
|Or Vegetable Oil, melted|
* Preheat oven to 400 F.
1. Bring the water to a rolling boil. Sift in the cornmeal and salt, stirring constantly. Remove from heat. If any lumps form, beat them well with a wooden spoon or whisk to get rid of them.
2. Spread an 8-inch-square baking pan with 1 Tbs of fat, coating the sides, also. Spread the batter in the dish, smoothing it out. Cover it with the remaining fat.
3. Bake cornbread for 1 hour, or until brown and crisp around edges.
Cut into serving pieces.
