Applesauce pound cake

Yield: 1 Servings

Measure Ingredient
1 cup Skim milk
1 cup Raisins
1 cup Applesauce
⅓ cup Packed brown sugar
¼ cup Canola oil
½ teaspoon Cinnamon and allspice
\N \N Salt; (optional)
⅛ teaspoon Nutmeg
2 cups Cake flour
1 teaspoon Baking soda
1 teaspoon Baking powder
1 cup Chopped apples or dates
½ cup Chopped walnuts; (optional)

Preheat oven to 325 degrees. In a large bowl, blend the milk, raisins, applesauce, sugar, oil and spices thoroughly. In another bowl, mix the flour, baking powder and baking soda. Combine with the wet ingredients.

Fold in the apples or dates. Use Baker's Joy in a 9x4-inch non-stick pan.

Pour in the batter and bake for 1¼ hours. Cool on a rack, slice and serve.

Serves 8-10
