Applesauce christmas cake

¾teaspoonVanilla extract
¼cupWalnuts, chopped

FROSTING

Cream shortening and sugar until light and fluffy. Beat in egg.

Combine applesauce and soda; beat into creamed mixture. Combine flour, baking powder, salt, and spices; add to applesauce mixture.

Stir in molasses, vanilla, raisins, and walnuts. Line the bottom of a 10" tube pan with waxed paper; grease and flour sides of pan. Spoon batter into pan. Bake at 350 degrees for 50 to 60 minutes. Let cool in pan 10 minutes; then remove cake from pan. When completely cool, spread top of cake with frosting. Frosting: Heat milk and butter in a saucepan until hot, but not boiling. Beat in sugar. Stir in walnuts and vanilla. Yield: about 1 cup.
