Apple-raisin bread pudding

1 | can | Evaporated milk (12 oz) |
½ | cup | Honey |
1 | teaspoon | Vanilla extract |
¾ | teaspoon | Cinnamon |
½ | teaspoon | Nutmeg |
¼ | teaspoon | Salt |
1 | medium | Apple, pared, cored and chopped |
6 | slices | Cinnamon-raisin bread, cubed |
1 | teaspoon | Rum extract (opt) |
Directions
Preheat oven to 350. Spray a 9" square baking dish with BAKER'S JOY.
In large mixing bowl, whisk whole eggs and egg whites until foamy.
Whisk in evaporated milk, honey, vanilla, salt, nutmeg and rum extract (optional).
Add chopped apple and bread cubes. Mix until bread is evenly moistened. Turn mixture into prepared baking dish.
Bake at 350'F. for 35-40 minutes until knife inserted in center comes out clean.
Serve warm, topped with light cream or non-dairy whipped topping.
Sprinkle lightly with additional topping, if desired.
