Apple granola bars

1½ | cup | Walnuts, shelled |
½ | cup | Dry Apples |
1 | teaspoon | Cinnamon |
1 | teaspoon | Vanilla |
¼ | teaspoon | Salt |
½ | cup | Firmly packed LightBrown sugar |
½ | cup | Dried Apricots |
6 | cups | Oatmeal, quick cooking |
¾ | cup | Unsalted Butter |
½ | cup | Honey |
Directions
Place nuts and dried fruit in a food processor and chop finely. Place in a large bowl and add the oatmeal. In a sauce pan, combine honey, sugar, butter and cinnamon, bring to a boil for 1 minute. Stir into the oatmeal mixture with the vanilla and salt. Press evenly and firmly in a 10x15 jelly roll pan. Bake 15 minutes in a preheated 350oF oven until golden. DO NOT OVERBAKE Cool and cut into bars.
Store in an airtight container or refrigerate.
