Apple granola bars

Ingredients

cupWalnuts, shelled
½cupDry Apples
1teaspoonCinnamon
1teaspoonVanilla
¼teaspoonSalt
½cupFirmly packed LightBrown sugar
½cupDried Apricots
6cupsOatmeal, quick cooking
¾cupUnsalted Butter
½cupHoney

Directions

Place nuts and dried fruit in a food processor and chop finely. Place in a large bowl and add the oatmeal. In a sauce pan, combine honey, sugar, butter and cinnamon, bring to a boil for 1 minute. Stir into the oatmeal mixture with the vanilla and salt. Press evenly and firmly in a 10x15 jelly roll pan. Bake 15 minutes in a preheated 350oF oven until golden. DO NOT OVERBAKE Cool and cut into bars.

Store in an airtight container or refrigerate.
