Acapulco turkey roll

Yield: 4 Servings

Measure Ingredient
4 ounces Lean ground turkey
1½ teaspoon Chili powder
1 large Garlic clove, minced
2 tablespoons Salsa (see recipe Seafood
\N \N Quesidilla and Salsa)
\N \N Salt and Pepper to taste
4 smalls Whole wheat tortillas
¼ cup Diet mayonnaise
2 cups Steamed broccoli flowerettes
4 ounces Shredded low-fat mozzerella
\N \N Or otherr low-fat cheese
\N \N Extra salsa

1. In small bowl thoroughly combine turkey, chili powder, garlic and salsa.

2. In medium non-stick skillet stir turkey mixture over medium heat until

cooked. Add salt and pepper to taste. Cool.

3. Spread tortillas with diet mayonnaise.

4. Divide turkey, broccoli and cheese over tortillas. Top with extra salsa and roll up to enclose filling. Cut roll in half diagonally.
