20-minute white bean chili

Yield: 6 Servings

Measure Ingredient
1 cup Chopped onions
1 \N Clove garlic; minced
1 tablespoon Vegetable oil
1 pounds Ground turkey
1 can Stewed tomatoes; (14 1/2 ounce)
1 cup Chicken broth or low sodium chicken broth
½ cup Grey PouponĀ® Dijon Mustard
1 tablespoon Chili powder
⅛ teaspoon Ground red pepper; (up to 1/4)
1 can Cannellini beans (15 ounce); drained and rinsed
1 can Corn (8 ounce); drained
\N \N Tortilla chips; shredded cheddar cheese, and
\N \N Cilantro; optional

In 3-quart saucepan, over medium-high heat, sauté‚ onions and garlic in oil until tender. Add turkey; cook until done, stirring occasionally to break up meat. Drain. Stir in tomatoes, chicken broth, mustard, chili powder and pepper. Heat to a boil; reduce heat. Simmer for 10 minutes. Stir in beans and corn cook for 5 minutes. Top with tortilla chips, shredded cheese and cilantro, if desired.
