(not just another) pasta salad

Yield: 12 Servings

Measure Ingredient
4 quarts Spiral or shell pasta; cooked
1 pounds Roma; or medium tomatoes, seeded; 1/2\" dice
½ cup Red onion; small dice
1½ cup Pitted olives; Kalamata or canned; halved
¼ cup Un dried tomates; reconstituted; chopped
1 cup Cauliflower; small pieces
½ cup Broccoli; small pieces
½ cup Roasted red peppers; 1/2\" dice
½ cup Capers
1½ cup Feta cheese; crumbled
¼ cup Fresh grated parmesan cheese
4 \N Cloves garlic; minced
¾ cup Extra virgin olive oil
¼ cup Red wine vinegar
1½ tablespoon Capers
1 tablespoon Liquid from capers
¼ cup Lemon juice
¼ teaspoon Fresh ground pepper
1 teaspoon Salt


submitted by: cathlin@... (Cathlin Bennett, Corvallis, Oregon) Combine all salad ingredients except parmesan cheese. In a blender mix all dressing ingredients. Pour dressing over salad and toss carefully, adding parmesan.
