Zucchini seafood casserole

4 | cups | Zucchini; peeled and sliced 1/4 inch |
1½ | cup | Bisquick baking mix |
1½ | cup | Shredded processed sharp American cheese |
1 | cup | Chopped onion |
1 | can | (6 1/2 oz.) crab meat; drained and cartilage removed or 1 can (6 1/2 oz.) tuna, drained |
½ | cup | Vegetable oil |
3 | Eggs; beaten | |
1 | teaspoon | Dried oregano |
1 | teaspoon | Salt |
½ | teaspoon | Pepper |
Directions
Heat oven to 400 degrees. Grease baking dish (12 x 7½ x 2). Mix all ingredients together. Spread evenly into casserole. Bake uncovered until golden brown and inserted knife in center comes out clean, 25-30 minutes.
Garnish with thinly sliced zucchini.
