Zucchini seafood casserole

Measure Ingredient
4 cups Zucchini; peeled and sliced 1/4 inch
1½ cup Bisquick baking mix
1½ cup Shredded processed sharp American cheese
1 cup Chopped onion
1 can (6 1/2 oz.) crab meat; drained and cartilage removed or 1 can (6 1/2 oz.) tuna, drained
½ cup Vegetable oil
3 Eggs; beaten
1 teaspoon Dried oregano
1 teaspoon Salt
½ teaspoon Pepper

Heat oven to 400 degrees. Grease baking dish (12 x 7½ x 2). Mix all ingredients together. Spread evenly into casserole. Bake uncovered until golden brown and inserted knife in center comes out clean, 25-30 minutes.

Garnish with thinly sliced zucchini.
