3 cups | Ripe bananas |
8½ cup | Spelt flour |
¾ cup | Canola oil |
3½ tablespoon | Baking powder |
1 cup | Apple juice concentrate |
2 teaspoons | Salt |
3 cups | Blueberries |
Preheat oven to 350 degrees F.
In a large bowl, mix the applesauce, bananas, flour, canola oil, baking powder, apple juice, and salt until batter is smooth and well mixed. Add blueberries and mix briefly.
Butter and flour muffin pan and fill cups three-fourths full.
Bake 45 minutes for large muffins, 30 minutes for regular size muffins.
Makes 30 to 36 muffins.
