Zesty turkey and rice

Yield: 1 Servings

Measure Ingredient
1⅔ cup Chicken stock
1 teaspoon Dried basil leaves; crushed
¼ teaspoon Garlic powder
¼ teaspoon Hot pepper sauce
1 pounds Canned stewed tomatoes
¾ cup Uncooked long grain rice
1 cup Frozen peas
2 cups Cooked turkey or chicken; cubed

1. Combine first 5 ingredients in a saucepan over medium high heat. Bring to a boil. Stir in rice. Reduce heat to low.

2. Cover and cook 20 minutes. Stir in peas and turkey.

3. Cover and cook 5 minutes more or until rice is done and most of liquid is absorbed.

Per serving: calories 332, fat 4.4g, 12% calories from fat, cholesterol 53mg, protein 28.1g, carbohydrates 42.5g, fiber 2.3g, sodium 608mg.
